Fettuccine Alfredo or fettuccine al burro is a pasta dish made from fettuccine tossed with Parmesan cheese and butter. As the cheese melts, it emulsifies the liquids to form a smooth and rich coating on the pasta.

Ingredients used in Fettuccine Alfredo
• Dry fettuccine - 350 grams.
• Vegetables (any of your choice) - 2 cups.
• Soy milk - 2 cups.
• Soy cheese - 6 tablespoons.
• Garlic - 4 cloves.
• Fresh parsley - 1 bunch.
• Black pepper powder - to taste.
Method:
  • In a pot of water cook pasta and drain.
  • Place pasta in a large nonstick saute pan along with milk and garlic. Bring to a simmer, stirring frequently.
  • Add cheese and continue cooking until the cheese melts and the sauce thickens.
  • Now add parsley and black pepper. Then add steamed vegetables. Toss gently.

Serve hot.
