Ingredients used in BRINJAL AND CHICKEN PASTA
• Fusilli pasta - 1 cup.
• Olive oil - 2 tablespoons.
• Garlic (chopped) - 1 tea spoon.
• Onion(chopped) - 1 number.
• Bell pepper(chopped) - 2 tablespoons.
• Slender eggplant(round slices) - 1/2 cup.
• Chicken mince(boneless) - 1 cup.
• Mixed herbs - 1/2 tea spoon.
• Salt - to taste.
• Red chilipowder - 1/2 tea spoon.
• Tomato puree - 1/4 cup.
• Tomato ketchup - 1 tea spoon.
• Parmesan cheese(grated) - 1 tea spoon.
• Mozzarella cheese(grated) - 1 tea spoon.
• Parsley(chopped) - 1 tea spoon.
• Water - as required.
Method:
  • Take a pan add water, pasta and boil it.
  • Heat olive oil in a pan, add finely chopped garlic, onion, bell pepper, slender eggplant and saute it.
  • Add boneless chicken mince and saute it.
  • Add mixed herbs, salt, red chili powder, tomato puree, tomato ketchup and cook for 2 minutes.
  • Check for seasoning, add boiled fusilli pasta, pasta boiled water and mix nicely.
  • Now transfer into pasta serving plate and garnish with parmesan cheese, mozzarella cheese, parsley.

Serve it.
