Ingredients used in Cannellini Vegetable Rice
• Rice - 1 cup.
• Cannellini beans - 1.5 cups.
• Yellow bell pepper - 1 number.
• Onion (chopped) - 1 number.
• Tomato (chopped) - 50 grams.
• Frozen corn - 1 cup.
• Fresh basil - 1 tablespoon.
• Fresh marjoram leaves - 1 tea spoon.
• Fresh thyme leaves - half tea spoon.
• Salt - 1/4 tea spoon.
• Black pepper powder - 1/4 tea spoon.
• Olive oil - 2 teaspoons.
• Water - 2 cups.
Method:
  • Heat oil in a large nonstick skillet over medium heat. Add onion and bell pepper and saute, stirring, until onion is translucent, about 3-4 minutes.
  • Add rice, water and bring to a boil. Reduce heat, cover and simmer 20 minutes, or until rice is done.
  • Now add tomatoes into blender and process until pureed.
  • Add to the rice along with the beans, corn, herbs, salt, and pepper and bring to a boil. Reduce heat, cover, and simmer 10 minutes.

Serve hot.
