Cooked raw mango pieces simmered in a sweet and spicy coconut sauce. Kairas is a combination of two words, kairiras, meaning raw/green mango + juice. This is one of my favorite preparation using green mango.

Ingredients used in Indian mango Relish Aam kairas
• Salt - to taste.
• Raw mango - 1 number.
• Hing - 1/4 tea spoon.
• Curry leaves - 1 spring.
• Fenugreek seeds - 1/4 tea spoon.
• Mustard seeds - 1/2 tea spoon.
• Red chilly - 2 numbers.
• Oil - 2 tablespoons.
• Coconut grated - 1/2 cup.
• Sesame seeds - 1 tablespoon.
• Black gram dal - 1 tablespoon.
• Jaggery - 2 tablespoons.
• Tamarind juice - 1/2 cup.
Method:
In a pan add black gram daal, sesame seeds dry roast them, add coconut powder cook this until golden in colour. Switch off the flame and make a coarse powder. Heat oil in a pan add red chilly, mustard, fenugreek seeds, add curry leaves, a pinch of hing, raw mango (cut into small pieces) saute this. Add salt, jaggery and add water put the lid on cook for some time, then add tamarind juice, cook it and switch off the flame.
