Ingredients used in Pasta Salad
• Pasta - 250 grams.
• Fresh asparagus - 125 grams.
• Carrot - 125 grams.
• Black pepper powder - to taste.
• Dijon mustard - 1.5 teaspoons.
• Balsamic vinegar - 2 teaspoons.
• Capers - 2 teaspoons.
• Parsley (chopped) - 1/4 cup.
• Salt - to taste.
• Olive oil - 2 teaspoons.
• Water - as required.
Method:
  • Combine 1tsp. oil, vinegar, mustard, salt and pepper to make a dressing.
  • Cook pasta according to package directions. Stir in oil to prevent pasta from sticking together. Drain pasta well.
  • While pasta is cooking, slice asparagus lengthwise in quarters, then across in 1 inch pieces.
  • Cut carrots in similar-size julienned pieces.
  • Steam or blanch vegetables for a few minutes.
  • Combine pasta with vegetables, dressing, capers and parsley. Adjust flavor with more vinegar or salt.

Serve warm or at room temperature.
