Ingredients used in STUFFED BAKED BRINJAL
• Eggplant - 4 numbers.
• Oil - 2 tablespoons.
• Onion(finely chopped) - 1 number.
• Green chillies(finely chopped) - 2 numbers.
• Salt - to taste.
• Tomato - 1/2 number.
• Mushrooms(finely chopped) - 1/2 cup.
• Cheese(processed or mozzarella) - 1/2 cup.
Method:
Cut eggplant into 2 half with the stem. Heat little oil in a pan and grill eggplant like as shown in the video. Transfer to a plate and allow it rest, later scoop out the center portion. Heat oil in a pan and add onion, green chilies, salt and saute it. Once onion is cooked add tomato and cook it. Add mushrooms and mix nicely, cook it later switch off the flame. Stuff this mixture inside eggplant and top it with grated cheese. Bake at 180 degrees for less than 10 minutes. Now stuffed baked brinjal is ready to serve.
