Ingredients used in CHETTINAD STYLE VENDAKAIMANDI
• Oil - to fry.
• Mustard seeds - 1/2 tea spoon.
• Garlic - 5-6 numbers.
• Red chillies - 2 numbers.
• Curry leaves - 1 springs.
• Shallots - 4-5 numbers.
• Onion(chopped) - 1 number.
• Salt - to taste.
• Okra(pieces) - 1 cup.
• Rice congee - 1 cup.
• Tamarind juice - 1/2 cup.
• Raw banana - 1 number.
• Chickpea flour - 2 tablespoons.
• Rice flour - 2 tablespoons.
• All purpose flour - 2 tablespoons.
• Black pepper powder - 1/4 tea spoon.
• Green chillies(chopped) - 1 number.
• Oil - to fry.
• Red chili powder - 1 pinch.
• Fennel seeds - 1 pinch.
Method:
  • Heat oil in a pan and add mustard seeds, garlic, fennel seeds, red chillies, curry leaves, shallots, onions, salt and saute it.
  • To it add okra, rice congee, tamarind juice, salt and cook until it is done.
  • Take a raw banana and remove skin and peel into thin slices and place in water.
  • Take a bowl and add chickpea flour, rice flour, all purpose flour, salt, black pepper powder, green chillies, oil, water and mix nicely.
  • Coat the raw banana with the batter and drop in hot oil and deep fry, later transfer into paper towel and sprinkle red chilli powder on it.
  • Take a serving plate and add cooked rice and pour cooked vendakkai mandi along with crispy raw banana pakora. and serve it.
