SARSON WALI BHINDI

Ingredients used in SARSON WALI BHINDI
• Okra-bendi - 200 grams.
• Potato - 200 grams.
• Mustard oil - 2 tablespoons.
• Salt - to taste.
• Garlic (chopped) - 1 tea spoon.
• Onion (chopped) - 2 numbers.
• Green chili - 3 numbers.
• Turmeric powder - 1/4 tea spoon.
• Cumin powder - 1/2 tea spoon.
• Coriander powder - 1/2 tea spoon.
• Pepper powder - 1/2 tea spoon.
• Chili powder - 1/2 tea spoon.
• Mustard powder - 2 teaspoons.
• Sugar - 1 pinch.
• Lemon juice - 1/2 tea spoon.
• Coriander leaves (chopped) - 1 tablespoon.
Method:
  • Heat the pan and add Mustard oil, once the oil is hot add potato, bendi, salt and fry it for 5 minutes on a medium flame. Then transfer it to a plate.
  • In the same oil add chopped garlic, ginger and saute it and add onion pieces, green chili and turmeric powder cook it for some time.
  • For mixture: Take a bowl and add Cumin powder, Coriander powder, pepper powder, Chilli powder, Mustard powder and a pinch of sugar, mix it and make into a paste.
  • And pour this mixture into a pan and mix it well. Then add fried potato and Bendi coated the mixture into it, then put the lid on and cook it for 2 minutes.
  • Add some salt, squeeze some lemon juice and add chopped Coriander leaves toss it well.

Serve this with Curd Rice.

Very nice..a nice twist to the regular bhindi.. liked the addition of potatoes&the mustard oil does make it taste better with crunchiness. .?
