Linguine with Ricotta

Ingredients used in Linguine with Ricotta
• Linguine - 340 grams.
• Artichokes hearts - 425 grams.
• Ricotta cheese - 230 grams.
• Parmesan cheese - half cup.
• Olive oil - 2 teaspoons.
• Garlic - 1 clove.
• Onion - 1 small.
• Dried oregano - 1/4 tea spoon.
• Salt - to taste.
• Dry white wine - 1/3 cup.
• Black pepper - to taste.
Method:
  • Cook linguine in boiling water until done (for about 10 minutes) and drain.
  • Heat oil in a medium-sized saucepan. Add onion and garlic and saute for 5 minutes.
  • Slice artichoke hearts in half and add to pan, along with oregano and wine; mix well. Cook over medium heat until just warmed through.
  • Remove artichoke mixture from heat and mix in ricotta cheese. Add to drained linguine and toss until well combined.

Serve with Parmesan cheese.
