Ingredients used in Carrot Halwa
• Ghee (clarified butter) - 2 teaspoons.
• Casewnuts - 1 tablespoon.
• Cardamoms (skinned and crushed fine) - 2 number.
• Carrots (grated finely) - 4 cup.
• Milk - 4 cup.
• Sugar - 1 cup.
• Curdled milk or ricotta cheese - 3 tablespoons.
• Almonds (chopped) - 1 tablespoon.
• Raisins - 1 tea spoon.
Method:
  • Roast dry fruits in ghee and keep aside.
  • Grate and cook the carrots by pouring milk in an open pan on low flame,with constant stirring.
  • When carrot is cooked, add sugar and cook untilit gets to a slightly thicker consistency.
  • Then add curdled milk or koya and cook for few more minutes with constant stirring.

Serve it either chilled or hot.

 Carrot halwa referred to as gajar ka halwa   is the most popular North India sweets makes its existence in the majority of special occasions like festivals, celebrations and parties. Carrot halwa came from nut dishes introduced by merchants from the Middle East of Asia throughout the Moghul period. Gajar ka halwa is a traditional Indian carrot dessert that will not fail to impress anyone.

 Gajar ka halwa is a tasty, rich dessert packed with nuts and dried fruits well-known across the world. It's really not a diet food. Usually eaten warm, gajar halwa tastes great coupled with vanilla flavor ice cream.

 Gajar Halwa is made of fresh grated carrots and cooked in milk and ghee, garnished with raisins and nuts. Because it's cooked in milk, doesn't require mava and lasts longer& healthy. It's also possible to use khoya or chhena if you wish the sweet to be containing more taste. It's simply the ideal dessert to be cherished post dinner.

 Carrot halwa is a wonderful sweet that tastes similar to a roasted carrot cake. There are several variations according to the region. Some recipes cook the carrots for long, although some cook to tender. Many are fudgier or wetter even though some cook until carrots get candied.   Some dry fruits are combined in together with tastes like cardamom or saffron.

 Making Gajar Ka Halwa isn't an extremely tough task when it comes to process; it needs a little more time and patience than another halwa.

 Benefit:

Carrot/ gajar halwa is loaded with vitamin A because its key ingredient is carrot and fat since it's additional ingredients are the ghee and milk. Vitamin A is superb for the eyes. Carrots are also beneficial to skin. It is also healthy with approximately 8 gr of proteins, 50.3gram carbs and 1.9 grams of fat.
