Ingredients used in BRINJAL WITH SESAME SEEDS
• Egg plant - 250 grams.
• Coriander seeds - 1/2 tea spoon.
• Cumin seeds - 1/2 tea spoon.
• Fenugreek seeds - 1/4 tea spoon.
• Pepper corns - 1 tea spoon.
• Curry leaves - 1 spring.
• Sesame seeds - 2 tablespoons.
• Tamarind - 5 grams.
• Oil - 3 tablespoons.
• Mustard seeds - 1/2 tea spoon.
• Ginger garlic paste - 1 tablespoon.
• Onion paste - 1/2 cup.
• Green chili paste - 1 tablespoon.
• Salt - to taste.
• Amchur powder - 1/2 tea spoon.
Method:
Take the Eggplant and slit into 4 and place in salt water. Heat a pan and add coriander seeds, cumin seeds, fenugreek seeds, peppercorns, curry leaves, sesame seeds, tamarind and dry roast it. Transfer to a blender to make a fine powder. Heat oil in a pan, add eggplant and cook it with closed lid for about 2-3 minutes. Move this fried eggplant to one corner. Now in the same pan on another side add mustard, ginger garlic paste, onion paste, green chilli paste, salt and mix it, place lid cook it for 3 minutes. To it add fine powder and mix it. Check for seasoning and add amchur powder, mix and cook until it is done. Now add chopped coriander leaves and serve it.
