Hot Fudge pudding combines the light texture of a chocolate cake with a smooth rich fudge sauce. Hot fudge cake is known by several other names like hot fudge sundae cake, baked fudge pudding, hot fudge pudding, chocolate cobbler, brownie pudding cake etc. Although the names are different, the basic recipe is the same sometimes with slight variations. History says said that the first hot fudge cake recipe was created by Emelyn Battersby Hartridge when she was a student at Vassar College in New York in the early 1920s. She learned from an acquaintance that a new confection--fudge--was becoming increasingly popular in Baltimore, Maryland. She began working on a recipe that would blend fudge with cake. When Hartridge presented her new fudge cake at the Vassar Senior Auction she sold 40 pounds of the dessert. The basic recipe for hot fudge cake/ pudding includes white sugar, flour, unsweetened cocoa powder, baking powder, salt, milk, butter, vanilla, brown sugar and hot water. You can cook hot fudge cake in an oven or in a crock pot. During the baking process, the batter separates into a cake layer and a hot fudge layer. Best served warm right out of the oven, hot fudge cake/ pudding can be enjoyed as by itself or topped with ice cream or whipped cream. It is a must have for all those chocoholics and can be made in a variety of ways to suit their taste. Grease a 8” x 8” glass baking dish or shallow 2 quart casserole. In the medium bowl, combine all purpose flour, sugar, and baking powder, a pinch of salt, cinnamon and cocoa powder. Whisk in the milk, butter and vanilla extract just until smooth. Spread batter evenly into the greased baking dish. In a small bowl, mix brown sugar and some cocoa powder; sprinkle evenly over the batter. Carefully pour some boiling water over the mixture in baking dish. Do not stir. Bake this for 30 minutes (batter will separate into cake and pudding layers). Cool in pan and later place on wire rack for 10 minutes. Serve warm in dessert bowls with ice cream of your choice.
