Ingredients used in Couscous With 7 Vegetables
• Couscous - 2 cups.
• Veg broth - 3 cups.
• Onion - 1 number.
• Carrot - 2 numbers.
• Turnip - 2 numbers.
• Sweet potato - 1 number.
• Zucchini - 1 number.
• Red pepper - 1 number.
• Garbanzo beans - 1 cup.
• Tomato sauce - 300 ml.
• Cinnamon powder - 1/4 tea spoon.
• Turmeric powder - half tea spoon.
• Saffron - 1 pinch.
• Salt - to taste.
• Curry leaves - 1 spring.
• Water - as required.
Method:
  • In a large saucepan, saute onion until lightly browned. Add vegetable broth and bring to a boil.
  • Transfer to a large pot and add carrots, turnips, and potato. Simmer 15 mins.
  • Lower heat and add zucchini and pepper. Cook 20 mins.
  • Now add beans, tomato sauce and spices. Cook til heated through.
  • In a separate pot, bring 2.5 cups of water to a boil. Add couscous, cover and take off of heat.
  • Let stand 5-7 minutes, fluff with a fork and serve with vegetables on top.
