Ingredients used in Vegetable Pulihora
• Rice - 2 cups.
• Fresh green peas - half cup.
• Sliced potatoes - half cup.
• Sliced beans - half cup.
• Sliced capsicum - half cup.
• Green chilies slited - 4 numbers.
• Grated garlic - 1 tea spoon.
• Dry red chilies - 4 number.
• Curry leaves - 1 spring.
• Roasted chana dal - 1 tablespoon.
• Urad dal - 2 tablespoons.
• Black gram - 1 tablespoon.
• Black pepper powder - 1 tea spoon.
• Turmeric powder - half tea spoon.
• Salt - to taste.
• Oil - 4 tablespoons.
• Lemon juice - 3 teaspoons.
• Ground nuts - 1 tea spoon.
• Asafoetida - 1 tea spoon.
Method:
  • First cook rice and take it into steel basin so that it cools down.
  • Then take lemon juice and salt, then mix with rice.
  • Cut potatoes, beans, capsicum into slices and boil it.
  • In a blender blend green chilies, garlic to a thick paste.
  • In a pan, add little oil and beans, red chilies, mustard seeds, bengal gram, black gram, groundnut and cook it till the dal changes its colour to brown.
  • Then add curry leaves, asafoetida, green chilies, turmeric powder, boiled vegetables and cook for another 2 minutes then add salt, green chilies, garlic paste into it. Saute it and add this to the above cooked rice.

Tasty vegetable pulihora is ready to serve.
