STUFFED BAKED BRINJAL

Ingredients used in STUFFED BAKED BRINJAL
• Eggplant - 4 numbers.
• Oil - 2 tablespoons.
• Onion(finely chopped) - 1 number.
• Green chillies(finely chopped) - 2 numbers.
• Salt - to taste.
• Tomato - 1/2 number.
• Mushrooms(finely chopped) - 1/2 cup.
• Cheese(processed or mozzarella) - 1/2 cup.
Method:
  • Cut eggplant into 2 half with the stem.
  • Heat little oil in a pan and grill eggplant like as shown in the video.
  • Transfer to a plate and allow it rest, later scoop out the center portion.
  • Heat oil in a pan and add onion, green chilies, salt and saute it.
  • Once onion is cooked add tomato and cook it.
  • Add mushrooms and mix nicely, cook it later switch off the flame.
  • Stuff this mixture inside eggplant and top it with grated cheese.
  • Bake at 180 degrees for less than 10 minutes.

Now stuffed baked brinjal is ready to serve.
