Ingredients used in VEGETABLE RICE
• Rice - 4 cup.
• Coconut - 1 number.
• Tomatoes - 4 numbers.
• Green peas(fresh) - 250 grams.
• Potatoes - 2 numbers.
• Carrots - 2 numbers.
• Raw banana - 1 number.
• Turmeric powder - 1/2 tea spoon.
• Oil - as required.
• Black pepper - 10 numbers.
• Cloves - 5 numbers.
• Cumin seeds - 1 tea spoon.
• Cinnamon - 1 pinch.
• Ginger garlic paste - 4 tablespoons.
• Green gram - 1/2 cup.
• Onions - 6 numbers.
• Green chillies - 10 numbers.
• Coriander leaves - 1 bunch.
Method:
  • Soak rice for one hour.
  • From half part of coconut take out two cups of milk by the grating.
  • Cut the potatoes, carrots and banana into slices, then saute them separately by salt in it and keep it aside.
  • Boil Green peas in water.
  • Take a pan add some oil, chopped onions and saute them till they become red in colour.
  • Add green chillies, cloves, cinnamon, black pepper, cumin seeds, ginger garlic paste then saute it.
  • Then grated coconut, tomatoes, coriander leaves, green gram, rice and saute again.
  • Add coconut milk, some water, fried potatoes, carrot slices and cook them.

Now garnish with round fried onions, banana slices and coriander leaves.
