Bitter Melon Curry With Coconut Milk

Ingredients used in Bitter Melon Curry With Coconut Milk
• Bitter gourd - 2 numbers.
• Salt - to taste.
• Turmeric powder - 1/2 teaspoons.
• Oil - 1 tablespoons.
• Onion (chopped) - 1 cup.
• Curry leaves - 1 springs.
• Ginger garlic (paste) - 1/4 teaspoons.
• Red chilly powder - 1/2 teaspoons.
• Coriander powder - 1/2 teaspoons.
• Coconut milk - 1 cup.
• Cumin powder - 1/4 teaspoons.
• Jaggery - 1/4 teaspoons.
Method:
  • Cut bitter gourd into roundels and transfer into a bowl, add salt, turmeric powder, mix and keep aside so that bitterness is removed from bitter gourd.
  • Heat oil in a pan, add onions, little salt, curry leaves and saute it.
  • Add ginger garlic paste, turmeric powder and saute it.
  • Squeeze bitter melon to remove extra water and add it to above pan.
  • To it add little salt, saute it and cook for 5 minutes on slow flame with lid on it.
  • Add red chilly powder, coriander powder, coconut milk, cumin powder and mix it.
  • Check for seasoning and cook it for 4 minutes. Atlast add jaggery and mix nicely.

Now bitter melon curry with coconut milk is ready to serve with roti, rice and mudda pappu.

That is delicious. This is my first time cooking bitter melon and it doesn’t seem bitter to me. Is it possible that the long olivegreen melon with lengthways ridges and no noticeable seeds when I cut it open, is a different type of melon and not so b

I made this yesterday and it came out very well. I didn't squeeze out the water from the karela though because I love the bitterness. You are, as always, awesome and an inspiration.?
