Ingredients used in Boondi Paneer and Peanut Samosa
• All-purpose flour - 2 cups.
• Whole wheat flour - 1 cup.
• Salt - to taste.
• Oil - as required.
• Water - 1 cup.
• Paneer (grated) - 3 tablespoons.
• Ground nuts-peanut (roasted) - 1 tablespoon.
• Coriander leaves (chopped) - 1/4 bunch.
• Red chilli powder - 1/2 tea spoon.
• Amchur powder - 1/4 tea spoon.
• Garam masala - 1 pinch.
• Boondi - 1 cup.
Method:

  • Mix all purpose flour, whole wheat flour, salt, oil to make a soft dough by using water. Cover the dough with a wet cloth and rest it for 15-20 minutes.
  • Divide the dough into smaller portions and again cover and rest it for few more minutes.
  • Spread some flour on the table and with help of the rolling pin, roll the dough into a very thin sheet.
  • Heat a tawa then place the roti and fry it on both sides for just few seconds. Remove and trim the edges and cut them into long strips. Cut the long sheet into two and wrap them in a wet cloth.

For the stuffing:

  • In a bowl, add paneer, peanuts, chopped coriander leaves, salt, red chilli powder, amchur powder, garam masala and mix well.
  • Then add boondi to the above bowl and mix well.

Preparation of samosa:

  • Take a thin sheet, fold the sheet in triangle shape and stuff the mixture inside. Cover the edges by applying maida paste and seal it.
  • Now, deep fry these samosas in hot oil until they are crispy and golden in color.
