Recipe of Roasted Pumpkin Tomato Soup:
- Vegetable stock - 150 ml
- Butter - 3 tbsp
- Onions - 1 no
- Carrots - 2 nos
- Olive oil - 1 tbsp
- Garlic - 5 nos
- Leeks - 1 tsp
- Celery, chopped - 1 tsp
- Rose mary - ½ tsp
- Pepper, crushed - ½ tsp
- Basil, dry - ½ tsp
- Pumpkin, cubes - 250 gms
- Tomato - 250 gms
- All-purpose flour - 1 tsp
- Salt - to taste
- Take a bowl and add dry basil, rose mary, crushed pepper, salt, chopped celery, leeks, garlic. Pour some olive oil and mix well.
- In this mixture, add tomatoes (cut into halves), pumpkin cubes, carrots, onions and mix well.
- Transfer all ingredients into a baking try and put it into the oven and cook for 45 minutes @ 160 degree C or until pumpkin and tomatoes become soft.
- Heat butter, add all-purpose flour and sauté till raw flavours are gone.
- Add vegetable stock, roasted pumpkin & tomato puree and mix well.
- Once this comes to a boil, add pinch of sugar and mix.
- Finish it off with a dash of cream.
- Serve hot with toast.
