Recipe of Vankaya gasagasala koora

Ingredient Name Quantity Unit
Turmerric Powder 1/2 Teaspoons
Oil To Deep Fry Egg Plants 1 Cup
Salt To Taste
Oil 4 Tablespoons
Coriander Leaves 1/2 Cup
Green Chilies 4 Numbers
Eggplant Round 1 Pound
Grated Coconut Fresh/Frozen 1 Cup
Khus Khus 3 Tablespoons

Directions

  1. Dry roast khus khus till rawness goes and you get good aroma on low flame.
  2. Grind khus khus, coriander leaves, green chilies, coconut grated with some salt and little water, to make a paste and set aside.
  3. Take 3 tbsps oil in pan, when hot add the ground paste and turmeric powder, fry till rawness goes and set aside. Now take round egg plants, make slits like shown in Sanjays  baingan, and deep fry in hot oil till 3/4th done.
  4. Then stuff the fried paste into the eggplants and fry for few more minutes in the pan till done adding the remaining 1 tbsp oil.
  5. Sprinkle salt over the eggplants, because we have only added salt required for the stuffing.
  6. Serve hot with rice.  vah chef added cumin and gingergarlic paste to suit to his taste you may choose to follow the recipe to suit your taste

you mistaken gasagaalu for Khus Khus which is spelled as 'Couscous' and pronounced as Khus Khus. It is precooked semolina ,made from wheat and it is medeterenian food.

I am a great fan of vankaya and the recipe is really awesome .I make a litte diversifed with lot of coriander called kothimeera vankaya. thankyou very much for wonderful recipee for people like me who love to eat vankaya.
