Spicy Mexican Bean Soup is an excellent, healthy, mouthwatering inspirational dish from the Mexican cuisine with robust and tantalizing flavors that kick starts your meal. This soup is considered nutritious as they are bursting with most of the important vitamins and nutrients coming out from zucchini, carrots, peas, tomatoes, rajma (red kidney beans), cumin seeds and aromatic herbs like thyme and oregano.

This dish is a scrumptious fiesta. Traditionally Mexican cuisine has distinctive qualities and is known for its varied flavors, colorful, decorative and use of variety of spices and ingredients, mostly native to the country. The use of a variety of chillies perfectly accentuates their dishes. Corn and beans are typically the staples of Mexican food.

Corn is also a component of a number of dishes or eaten fresh or as corn on the cob (Elote). Squash and chili pepper are other prominent ingredients in Mexican cuisine. Frequently used aromatic herbs and spices are chilies, oregano, thyme, cilantro, epazote and cinnamon etc. Chipotle, a smoked dried jalapeno chilies is another common ingredient in this cuisine.

As the name of this dish says so, the soup has bold, vivacious flavors with the spicy effect from the chilies and distinctive flavor from the cumin seeds (do not substitute it with cumin powder as whole cumin seeds really adds that extra delight to the soup). The secret of this brilliant soup is the mix of the veggies and bean in the chilli sauce. It makes a marvelous protein rich vegetarian dish that is quick to prepare and appetizing.

Thyme and oregano are often used for flavoring soups, stews and meats. It has a particular affinity and is used as a primary flavoring. Fresh or dry herbs always pay triple dividend to your dish by good looks, aromatic flavors and fragrance. The Mediterranean charms of these fresh herbs have an intoxicating aroma.

Since thousand of year now, garlic has been used in both food and medicine. It is priced mainly for its strong flavors. Today garlic is considered to help heart disease, high cholesterol, high blood pressure, and to boost the immune system. Garlic may also help protect against cancer. Garlic is also taken in form of medicine, pickles and added to a variety of vegetarian and non-vegetarian recipes.

For preparing the Spicy Mexican Bean Soup, firstly you require to soak the rajma (kidney beans) overnight or for at least 8 hours. Drain the water and then pressure cook up to 2 whistles. Mash it a little after cooked. However, leave some of the whole beans for good look, taste and texture.

Heat olive oil in a pan and when it gets hot, add cumin seeds. When it crackles, add the chopped onions and garlic. Saute well until onions are translucent. Add the chopped vegetables (zucchini, carrots, peas or any vegetable combination) and sauté for about 2 minutes.

Add some water to this and bring to a boil. Add fresh cilantro, chopped tomatoes, tomato puree and red chili powder. Simmer the heat for about 5 minutes. Now add the mashed beans and some more water according to the consistency of the soup you desire. Season with salt to taste.

Top it with dried crushed thyme and oregano and chilli flakes and mix. Serve this luscious spicy Mexican bean soup with a dollop of sour cream. A perfect soup bringing out the goodness of kidney beans, veggies and herbs, which are naturally rich in protein and calcium.
