I, being a true Hyderabadi will take all the pride to talk about one of my most favourite rice delicacies which is popularly known as Biryani. Vah! The name itself gets you bowled over and makes your mouth dribble by just the aroma of this exotic dish namely ‘Biryani’.

Biryani is now a signature dish in most restaurants, hotels, marriages, functions etc in Hyderabad. Influenced from the Mughlai cuisine, biryani has since ages made its approach originally from Persia and walked through its way to the sub-continents through different routes via traders and immigrants. Historians state that the name ‘Biryani’ is derived from the Persian word ‘Birian’ which actually means to fry or to roast. During the Mughal rule in Lucknow and Hyderabad in 18th and 19th centuries, this dish was considered as the royal dish for the Nawabs.

Both regions have their own authentic style of preparing the Biryani. Over days, the popularity of this dish spawned several variants that were invented in different regions it propagated to. Biryani is a royal dish, highly aromatic, scrumptious and appetizing to eat.

It is one of the most popular and acclaimed dishes in India as well as in the world.
