OATS AND COCONUT PAYASAM

Ingredients used in OATS AND COCONUT PAYASAM
• Oats - 2-3 tablespoons.
• Coconut(freshly grated) - 1/2 cup.
• Sugar - 1/2 cup.
• Ghee - 1-2 tablespoons.
• Cashew nuts(pieces) - 1 tablespoons.
• Raisins - 1 tablespoons.
• Milk - 2 cup.
• Cardamom powder - 1/4 teaspoons.
Method:

In a thick bottom vessel, add some ghee and when it gets hot, add cashew nuts and raisins. Fry them until the raisins get puffed up and cashew nuts become slightly golden in color. Add oats, freshly grated coconut and mix well. Add milk, water and cook until the oats are done. Add sugar, mix and if required add little water to get the desired consistency. Add cardamom powder, mix and cook for about 3-4 minutes. Switch off the flame, dish out the payasam and garnish over with nuts.

The freshly grated coconut cooked with oats in milk gives a wonderful dense to the payasam apart from lending its rich taste and aroma.

 

Payasam is also known by various other names in India such as Kheer, Payasa, Payesh etc. It is an exotic and delicious rice pudding which is a traditional south Asian sweet dish. Most often, the payasam is generally prepared during festivals, special occasions, or religious functions etc. It is an integral part of the Kerala Sadya feast. There are several different kinds of payasam that can be prepared from a wide variety of fruits and starch bases.

Recipe:  Oats and Coconut Payasam

Ingredients:

  1. Oats                                        -       2-3 tbsp
  2. Coconut, freshly grated     -       ½ cup
  3. Sugar                                      -       ½ cup

Coconut is a very versatile ingredient that is used in making various sweet and savory dishes.

 

The white flesh meat in the coconut is edible and can be used fresh or dried for cooking. It is used for making chutney, adding few spices to it and makes a aromatic masala for curries and gravies. The fleshy part can also be used to produce coconut milk which is used in various aromatic and flavorful dishes like cooking fish in coconut milk with spices or for making kheer (Indian dessert). The fresh coconut meat of this wonderful tropical nut is delicately added into soups, spicy and tangy chutneys, spicy sambals, refreshing sorbets and cakes. They are also ground into a paste and added into thick and rich gravy based curries. This is an awesome and yummy Indian sweet delicacy.
