Papdi Chaat is a popular mouth wateringly delicious savory snack and comes under a group of hot and spicy snacks known as 'chaat or chat' in India. Papdis are small crisp flat flat puri layered with various ingredients. Papdi chaat can be considered a finger food made of wheat wafers topped or filled with a tasty mixture of potatoes, onions and chick peas, served with spiced yoghurt.
 
 Papdi is a flat disk shaped poori which is crispy or flaky. They are so spicy and yummy that just thinking about them makes your mouth water. Serving of Chaat would differ region wise and also vary as per taste. You can also make the chaat at home and let your imagination turn wild in preparing the Papdi chaat as per you liking with as many ingredients available at home.
 
 Chaats are very popular in Mumbai, Gujarat and many other states. Preparing the Papdi for the papdi chaat is very simple and easy. Take a bowl, ad butter, ajwain or carom seeds, salt and mix well than add the all purpose flour (maida) and mix well. Add little water and keep kneading until it forms firm dough.  Roll it like chapatti but should not be too thin.
 
 Make small disc shapes and heat oil on medium flame and deep fry till light golden brown color. Another variation to make the papdi is roll it to a thin chapatti sprinkle flour and fold it into triangle and deep fry. This is because the papdi would have layers and be flaky. Ensure the oil is hot enough before frying the papdi. If the oil is not hot enough, the papdi will absorb a lot of oil.
 
 Remember to fry the papdis in small batches and fry slowly, flip and turn continuously to both sides are light golden brown. Cool the fried papdi to room temperature. Store the papdis in airtight containers to stay crisp. Papdi Chaat  is basically a snack that includes papdi, coriander chutney, tamarind chutney, curd, boiled potatoes, some masala etc.
 
 They best served to children after they are back from school or on a nice rainy day. Once the papdis are ready place the puris in a serving plate. Layer it with the mixed chanas and beans. Add chopped onions and potatoes. To make it more nutritious add boiled corn and soya beans. Next mix the chutneys in desired quantity and pour over the mixture. Sprinkle red chilli powder, chaat masala and coriander.
 
 Sprinkle sev to decorate and serve. Another variation is that you can break the papdis into pieces and add all the vegetables like the mashes potatoes, tomatoes, cucumber, channa and different chutney topped with coriander and sev.   1. take a plate,spread papdi apply sweet chutney, aloo pices,cucumber,tomatoes,onion, green chutney, sweet curd, then sprinkle red chilli powder, chaat masala,cumin powder, sev, again top it with curd then sprinkle coriander leaves.
