In my quest to making healthy foods, this Oats Congee with Paneer is an extremely innovative type of a porridge or gruel or soup made with the goodness of oats and adding some foods rich in beta-carotene like carrots, orange juice etc to make it healthy and nutritious dish to eat. Oat Congee with paneer is got subtle flavors from some of the best herbs and spices to make it taste good and light.
The robust flavors from dill leaves, sweet essence from saunf powder and heat from pepper powder is a brilliant amalgamation that adds the right amount of savor and zest along with a mild tartness from orange zest and ginger juliennes to the soup. Congee or Kanji Congee or Kanji as popular known in Tamil Nadu is a rice porridge made with plain rice. It is most often served with side dishes. Paneer Paneer is fresh cottage cheese extensively used in Indian cuisine especially in north India. It is usually served as an appetizer or accompaniment to a main course. It is moist and has soft crumbly texture. It has a slightly chewy consistency and mild flavour.
It hold its shape well and doesn’t melt, hence you can sauté it, grill or crumble/ grate and just do about anything to add in your dishes. Paneer also happens to be one of the easiest cheeses to make at home, requiring nothing more than milk and lemon juice. Paneer is one of the rich source of proteins for most vegetarians and are added to classic Indian dishes like kormas, curries etc.
How to prepare Oat Congee with Paneer:
- Oats - 2 tbsps
- Water - as required
- Carrot, grated - 1 cup
- Orange zest, grated - ¼ tsp
- Saunf powder - ¼ tsp
- Pepper powder - ½ tsp
- Ginger juliennes - 1 tsp
- Orange juice - 1 cup
- Dill leaves - 1 tsp
- Paneer, sliced - 4-5 nos
- In a vessel pour some water, carrot, orange zest, saunf powder, pepper powder, ginger juliennes, oats and salt to taste. Allow this to boil.
- After it comes to a boil, reduce the flame and let it simmer for 4-5 minutes.
- Then add orange juice, dill leaves and serve hot in a soup bowl by adding paneer slices.
- This soup can also be eaten with fantastic crackers.

Combine with a variety of vegetables to make a scrumptious congee or soups, upma or khichdi, or add in some fruits or nuts or spice it with little cinnamon and nutmeg which will give great flavors to your oats.
